Nonchalance is not something we feel toward smoked meats, especially when bacon and cheddar are added to the mix. So when we found out about Schaller & Weber’s Bacon Cheddar Brats, we dropped everything and ran. It was brat bros Ferdinand Schaller and Tony Weber who paved the way for this carnivorous creation, crafting New York’s best German-style sausages in their small shop on the Upper East Side in 1937. Very little has changed since, not even the names, as Schaller & Weber is still family owned and operated. Serve their bacon and Cheddar Brats for breakfast, lunch, dinner, even as a midnight snack; we won’t judge.
