I made my way to Petee's with New York Magazine's glowing write-up of "the absolute best pie in NY" in hand, but I could have just followed the line out the door! Petee comes from a family of serious pie-makers who taught her the trade. You can taste the "down-home"-ness in all her pies -- particularly in my favorite, Lemon Chess.

Petra “Petee” Paredez grew up in Leesburg, Virginia where her parents own the acclaimed Mom’s Apple Pie Company, so you could say baking is in her blood. Essentially having been raised in the bakery, Petee was pulling all-nighters before Thanksgiving and learning the tricks of the trade from a very young age. As such, she grew up experimenting with new recipes using produce grown on the family farm, so it was only natural that when the opportunity arose to open her own pie shop, she jumped.

Petee’s powerful and simply philosophy — make the best pie money can buy using real ingredients — informs the modern rustic vibe in her downtown Manhattan shop and flavors. All of the pies are made from scratch, by hand, using seasonal local produce and natural fair-trade sweeteners. It’s not easy, but it’s just one of the reasons NY Magazine named Petee’s the “Absolute best pie in New York.”
