Pickling their meat for a full month allows the taste and texture of Katz’s corned beef to reach maturity and full flavor. Katz’s uses the traditional “dry cure” method. Immersed in brine, the flavor reaches every bit of meat. Unlike most commercial corned beef, Katz’s doesn’t inject water and salt into their beef.
