Instead of hopping on the third-wave coffee bandwagon, Amy Rothstein decided to fill a larger gap on most café drink menus—quality chai. At the age of 26, she founded Dona Chai with a vision and a 70-gallon kettle. Since 2014, she has built a business around quality ingredients and simple methods—black tea, fresh ginger and spices like cloves, cinnamon and green cardamom are not only sourced from around the world, they are ground fresh per batch and slow steeped to a create a deep, complex flavor.
