When the 19th century California ranchers who created what’s now known as Santa Maria style BBQ first lit their Red Oak fires, odds are they never envisioned their product would one day receive nationwide acclaim. But centuries later that’s just what happened, as Copper Top BBQ, a Santa Maria style BBQ joint nestled in a valley between the Sierra Nevada and White Mountains, was named the “#1 Restaurant in America” by Yelp’s users. Cooked over a higher temperature fire than traditional BBQ, due to the high winds in the Santa Maria Valley that gives the style its name, the trademark dish is Santa Maria Tri-Tip Beef: a sirloin cut that is dry rubbed and smoked over Red Oak before being thinly sliced against the grain and traditionally served alongside beans or even salsa.
