George Mendes is a Michelin-starred chef and owner of Aldea Restaurant in NYC, where he makes Iberian-influenced cuisine. Mendes, a first generation American born to Portuguese parents, is classically trained in French technique and has studied with great chefs including Alain Passard, Roger Vergé, David Bouley, Martin Berasategui and Kurt Gutenbrunner.

The custardy egg tart, or “pastel de nata” is a delicious flaky tart found all over Portugal. George’s version is inspired by the traditional Portuguese treat. His tidy little tarts have a flaky pastry filled with a subtly flavored custard. Sold and served all over Portugal for breakfast, tea time, or a pick-me-up, they are hard to find in the U.S. — especially in such authentic, delicate production.
